Chocolate Covered  Cherry Fudge

Welcome to Fudge on Friday. A new series that will feature a new fudge recipe every Friday. Chocolate Covered Cherry Fudge is the first recipe in this series. Chocolate Covered 🍒 Fudge is made with candied cherries from Paradise Fruit Co., milk chocolate chips, mini marshmallows, maraschino cherry juice and evaporated milk. The end result is a chocolaty cherry fudge reminiscent of  those chocolate covered cherries you see at Christmas time but much better:)

Isn’t It??

I know what some of you must be thinking, “Isn’t it a little early to be talkin’ and makin’ fudge?” “It’s August for crying out loud!” While the rest of you are thinking, “It’s never to early for fudge!” And then there is someone like me, who just likes to make fudge. Not only do I like to make fudge, I like to come up with different “flavors” of fudge. Not to let the cat out of the bag but that will be evident in upcoming “Fudge On Friday” posts/recipes;)

To Avoid Confusion

To avoid any confusion with the recipe, I thought I’d clear things up about the cherries and cherry juice used to make chocolate covered cherry fudge. This recipe calls for using candied cherries and maraschino cherry juice. The cherry juice is from a jar of maraschino cherries that I had in my refrigerator. I wanted to add a tad more cherry flavor to the fudge and the maraschino cherry juice filled in nicely. The cherries used are candied cherries from Paradise Fruit Co. If you read my blog at all, you know that I develop recipes using candied fruit from Paradise Fruit Co. The cherries in this recipe are not the jarred maraschino cherries, even though you probably could use them in this recipe. I hope this explanation clears up any confusion and doesn’t add to the confusion;) hehe

Chocolate Covered Cherry Fudge

Chocolate Covered Cherry Fudge is a true delight, made with dried cherries from Paradise Fruit Co.

Ingredients

  • 1 1/2 cups granulated sugar
  • 2/3 cup evaporated milk
  • 4 tablespoons maraschino cherry juice
  • 2 tablespoons butter or margarine
  • 1/4 teaspoon salt
  • 2 cups miniature marshmallows
  • 1- 12 oz bag milk chocolate chips
  • 1/2 cup chopped candied cherries
  • 1 teaspoon almond extract

Instructions
 

  • LINE 8-inch-square baking pan with foil. Butter foil. Set aside.
  • COMBINE sugar, evaporated milk, cherry juice, butter and salt in medium, heavy-duty saucepan. Bring to a full rolling boil over medium heat, stirring constantly. Boil, stirring constantly for 5 minutes. Remove from heat. Vigorously stir in miniature marshmallows, chocolate chips, chopped dried cherries and almond extract. Spread into prepared pan. Refrigerate overnight. Remove fudge from pan and remove foil. Cut into squares and enjoy.
